CREAMY BUTTERNUT SQUASH SOUP
This hearty wholesome dish has been one of my go-to's, because it's packed full of immune boosting ingredients!
🌱 Butternut squash (like other orange-colored fruits and vegetables) is full of beta-carotene and alpha-carotene. Your body converts them to vitamin A, which is important for your immune system.
🌱 Turmeric's main active compound Curcumin has been identified as an antioxidant and anti inflammatory. Top tip: Combining black pepper with
turmeric enhances absorption of Curcumin in the body by 2,000%.
🌱 Garlic has been shown to decrease inflammation and boost immune function.
🌱Pumpkin seeds contain Zinc, which helps the immune system fight bacteria and viruses.
🌱 Lemon is a rich source of Vitamin C which helps to boost immunity and reduce oxidation within the body.
🌱 Ginger contains powerful anti - inflammatory, antiviral & antibacterial properties!
RECIPE
1/2 butternut squash cubed
2 garlic cloves
Nub of ginger
1 can coconut milk
Tsp turmeric
1/2 tsp curry powder
Squeeze of lemon
Salt and Pepper
(For more liquid add Veg stock)
Add all items together in a pan, blend once cooked and add pumpkin seeds, olive oil, coriander and walnuts to garnish.
